When searching for new recipes, we’re usually thinking about what to avoid: eggs, butter, oil, dairy, gluten. Not this time. Anna Beck’s apple muffin recipe stuck out to us because keeps in an ingredient others usually toss out: apple peels.
Keeping the peel on your baking apples doubles the amount of fiber, adds more of vitamins C and A, and retains the antioxidant quercetin, which helps with lung function and improving memory, making this recipe as nutritious as it is delicious.
“This is so moist and it is soooo good,” Beck writes about her muffins on baking blog Urban.Apron. “No one would guess it is gluten-free and vegan. I’m kind of addicted.”
