MEATLESS MONDAY: Fudgy & Flourless Dark Chocolate Brownies

What’s better than sinking your teeth into a fresh-from-the-oven, dark-chocolate brownie that’s so rich you might as well be biting into a piece of fudge? Nothing. The answer is nothing, and we’re not going to even try to think of a comparison. This is making-your-last-student-loan-payment-and-celebrating-with-a-warm-bubble-bath level of delight.

Sure, you can find joy in a brownie from your favorite local bakery, but even the most delicious versions are not the same as pulling a pan from the oven and cutting directly into them while the scent of chocolate fills your home. The only problem with this scenario (besides the fact that we aren’t doing it right now) is all that effort it takes to make from-scratch brownies.

Fortunately for us, Anna Beck at Urban.Apron has a super-simple recipe for Fudgy & Flourless Dark Chocolate Brownies that are so decadent, we found it hard to resist diving in before they had the chance to cool. “No shame,” says Anna, who shares our lack of patience for such things.

To make these beauties, you’ll want to get five ounces of good-quality dark chocolate – you know, the real deal, 60% or higher stuff. Melt the chocolate with a half-cup of unsalted butter in the microwave for thirty second intervals, stirring until it’s completely smooth. Transfer this mixture into a large bowl and add in one cup plus one tablespoon of dark brown sugar, three eggs, a half-cup of unsweetened cocoa powder, a quarter teaspoon of salt and two teaspoons of pure vanilla extract. Stir until everything is completely incorporated.

You’ll pour the mixture onto an eight-by-eight, parchment paper-lined pan, smooth it out until even and bake in a 350-degree oven for about forty minutes. You want the top to be firm and crackly but not burnt. Once the brownies are finished baking, let them cool in the pan for at least thirty minutes, then invert them onto a cutting board to let them cool some more – but who are we kidding? You know you’re going to dig into them before those first thirty minutes are up.
