MEATLESS MONDAY: Cacao-Coconut Macaroon Bites

One of the (many!) reasons why we love Anna Beck’s baking blog is because she’s always finding ways to make our favorite store-bought snacks at home. That’s exactly what she did with LARABAR’s macaroon bites, a sweet snack made from dates, almonds, coconut and chocolate chips.

Anna did some experimenting in the kitchen and discovered that replacing the chocolate chips with raw cacao powder cuts the added sugar without losing flavor. “Pop 'em like candy, without the sugar crash…” Anna recommends on Urban.Apron.

And these Cacao-Coconut Macaroon Bites are poppable! Anna’s recipe makes about 20 bites, but but the time we’re done rolling these little balls of sweetness in coconut flour, they’re already almost gone. “There’s something so fun about a bite you can just pop in your mouth. And even better when it’s filled with all natural goodness,” Anna writes. “Food is a bit like our personalities: best when natural and honest. That's when it shines. And there is nothing fake about these little guys!”

We make our macaroon bites with Medjool dates, raw cacao powder, unsweetened coconut flakes and almonds. Make a batch for the week and pop ‘em in your mouth to satisfy your sweet tooth.
